Today was a rather exhausting day. It was President’s Day and since I work for the state, of course we get the day off. At least, I think it’s President’s Day… lol! Anyway, my mom stayed over last night so that we could go to the zoo together today before she flew home. I made a bento for all of us. Mr. Pikko was going to go, but then discovered the toilet was leaking and so had to stay home and fix that. Yuck!!

So me and moms headed off to the zoo with one really itchy girl (she broke out in hives last night for some unknown reason) and one monkey. It took us like an hour to get from the car to the picnic area because Buddy wanted to stop and “WHOAAAAAA!” at everything. It was a sweltering day and I was ready to leave after staying 5 minutes in the Keiki Zoo.

I made spam musubis and tucked in some sliced fishcake to fill the spaces on the side. This time I used Spam Lite so that I could excuse myself for eating more than one. ^_^

I could have just brought the musubis and that would have been enough, but I made yakisoba, sweet potato, and shoyu hotdog for the second layer. I don’t know why, but it didn’t even occur to me to use my octopus dog cutter that I bought from J-List during Christmas. I was packing them in when I remembered it and I was ready to kick myself. Oh well… next time!! Baby Girl didn’t seem to mind. She grabbed like 5 hotdogs and proclaimed to all that were listening that those were HER hotdogs. When she couldn’t eat them all she ever so graciously gave them to Buddy to eat. Cause she’s so nice like dat.

For the yakisoba I just had a package of yakisoba noodles in the freezer. I bought a bag of stir fry veggies, fried it in 2 Tb of olive oil, added two slices of Spam, the noodles, and then 10 Tb of oyster sauce. Very quick and easy to make and tastes really good. I have some for my lunches this week.

After the zoo we went to Waiola for shave ice and man the line was retardedly long. My mom took like 20 minutes to come back with the cups. Tasted so good though, was worth the wait. Anyway, it’s 8 pm and I need to go bathe and pass out.

UH Spam Musubis

Since I had no bento today due to the holiday, I’ll be posting about my food for Saturday’s football game. The Warriors played Fresno State and the stadium was almost sold out due to UH having a “rivalry” with FSU. The game was going really good until the second half when they changed their strategy. Then in the 4th quarter, Colt Brennan was knocked unconscious, which scared 48k people silly for quite some time. We’re all still very concerned as preliminary reports had him with a “grade 3 concussion”, which everyone was googling and returning back with phrases like “out for 6-8 weeks” and “career over” and “possible permanent brain damage”. Colt’s concussion has been downgraded to a “mild” concussion, but all UH fans are of course still concerned for his safety. I really do hope that he’s as well as the University and Coach Jones say he is.

Me and my MIL got drenched in beer, so that was… interesting.

Okay so onto the food… this is the “something” that I’ve been mentioning for weeks that I have been trying out for football and finally I ended up giving up on what I’d originally planned, which was green musubis with the Hawaii H logo cut out of nori and put onto a plain triangle musubi. I found out that plain musubis don’t taste that great at games. So anyway, this time I just went for the green look in a spam musubi!

I achieved this with simple food coloring added to the rice before cooking. You guys have seen my coloring rice in my 100 bento, but that time I had added the coloring to the rice after it was cooked. I made 10 musubis from 1 can and cooked 3 cups of rice (3 cups raw, 6 cups cooked) with 5 drops of green food coloring. This comes out to the perfect amount of rice for 10 musubis. (at least, the way I make it)

We went to the zoo today and I was wiped out and ready to leave by the time we hit the reptile house. Unfortunately for me we ended up staying there 3 hours. Still, it was fun. I’m packing up the remaining bento orders tonight plus burning the midnight oil finishing some hats for the ZAM people to wear at the festival. I leave in two days!!

As I mentioned earlier today we took a trip to the zoo so I went to Foodland earlier this morning to get a few things such as stir-fry veggies, fishcake, and some turkey hotdogs. The kidlets were driving me absolutely BANANAS so preparing the lunch took a lot longer than expected and by the time I was done it was 5 to noon, so Mr. Pikko suggested we just eat at home. It would have been nice to actually eat it out, but in the end I figured it was more convenient to eat at home anyway.

I used my large 3 tier bento box but only needed to use the top layer since we were the only ones going. There are spam musubis on the right. I made 9 musubis and then froze 5 so that next time I can just bust them out and nuke em. Same for the yakisoba, I was able to freeze 5 separate servings for future bentos.

On top of the yakisoba are some crab hotdogs! I was finally able to use them, I was so thrilled!! I mauled a couple until I got the hang of how to use it, then cooked them in the same sauce I’d used to make the spam musubi. The legs and pincers fanned out after they’d been cooked for a bit. To go with the hotdogs I made two round onigiri for the kids decorated with the new nori punches I got. For the cheeks I lightly dabbed them with some red hana ebi (colored shrimp flakes). It needed color and they looked nice and cheerful after I dabbed it on! Last of all is some sliced vegetable fishcake.

The zoo was fun, but right after the elephants some poor little girl about 6 or 7 fell down hard and was screaming something awful. Hubby suggested I go over and offer whatever I had in my little first aid kit and when I got over there it was horrifying. Her mouth was full of blood and her mom was saying that two of her teeth were gone. *CRINGE*

After the zoo we went to eat Japanese food and I had sushi. I gained four pounds today, hahahaha!! Hopefully the 2 1/2 hours of walking around the zoo with a bag full of water bottles and sleeping will bam that down to at least 131 or something so I don’t have to feel like such a porker after just reaching a nice goal. But even with that weight gain, here is my picture as promised.

If you’re wondering why I took my own picture in the bathroom and why I’m not looking up, it’s cause I tried to get Baby Girl to take my picture but she’s too short so all the pictures ended up looking like they were taken by.. well, a 3 year old. The front view picture turned out too blurry and I’m too lazy to go take another one already. The ones where I’m looking up look kinda creepy cause I’m looking above the camera angle. I don’t know how to explain it, but trust me, it looks scary.

So anyway, this is me exactly three months after joining Weight Watchers. I canceled yesterday and left them a nice feedback message. Hopefully I’ll be able to reach my goal on my own and maintain successfully from there!

Today we had quite the adventure attempting to go to the beach with the family. We ate at Outback last night and decided on an attempted arrival time at Ko Olina of 8:30 am. Running late, we got there at 8:45 only to find out that all the beaches were full and were turned around at the guard shack. The other half of our party had managed to get in only to find car lines at the parking lots of at least 10 cars. Last time we had 4 cars ahead of us and waited over 45 minutes for a spot and that was at 10:30 when it was actually possible people might leave the beach.

We headed out onto the freeway looking for a possible alternate beach but eventually decided that we did not want to end up on the 6 o’clock news as “Local Japanese family of noobs killed on deserted beach in Nanakuli”. Eventually we got an “in” at Ko Olina and headed back for some free parking goodness. This picnic was a great excuse to finally use my big 3-tiered bento box!

My contribution to our way too huge spread of food was corn, Aidell’s chicken meatballs, watermelon, and some old pupu type food that my mom used to make years and years ago. I’d read about the meatballs on Lunch in a Box and had seen them at Costco before. When I went to buy them yesterday it just so happened that they were giving out samples of them and though I didn’t get to try them, I’d gone specifically to get some. Due to the sampling almost every box was gone and I got the second to the last one. Go me! They were super easy to prepare. All I did was dump them into a bowl and microwave on high for 5 minutes!

These lovely things are probably on the Top Five Foods You Should Never Eat list for Weight Watchers: deep fried won ton with spam and kamaboko! Oh so good though. Unfortunately I was unable to keep them crispy until lunchtime. I’d eaten one in the morning and wow they were full of win. Despite the sogginess, everyone loved them!

Overall it was an okay beach trip, even with two kids afraid of the water and one afraid of sand. It rained. A lot. I pigged out on spam musubi, fried chicken, a huge onigiri, meatballs, won ton, corn, and watermelon. I’ll have to be really good all week and exercise cause man did I eat like 30 points today. I lost .5 lb last week! A good slow-down rate that I am perfectly fine with!
