Yesterday I started my new job at UH and it was a very nice first day! All the people that I met are great individuals and my boss is the greatest. Our office is just renovated (an old anatomy classroom that stored bodies, omg!) and my desk is brand spanking new. I’ll try to take a picture of it today or something. I have increased responsibilities, which is something I’ve yearned for. 2008 is looking like it will be a good year work-wise.

My lunch today is an oven baked chicken thigh with rice and corn. On the side I have a small piece of banana cake I made earlier this week and some mega huge blueberries I got at Costco yesterday.

I hope everyone had a wonderful Christmas! I had a pretty rough and emotional Christmas, but things are looking up now. I’d go into details, but I don’t want to paint my blog in blue. I’m getting excited about the Sugar Bowl coming up in just 4 days!! GO WARRIORS!!

As I mentioned yesterday, I had Mochiko Chicken marinating. I’m going crazy with too much to do, so I’m going to keep today’s blog short and sweet. Recipe from Jean Watanabe Hee’s cook book, Hawaii’s Best Local Recipes:

2 lb boneless chicken thighs
4 Tb Mochiko flour
4 Tb cornstarch
4 Tb sugar
5 Tb soy sauce
2 garlic cloves, chopped
1 Tb sesame seeds
1/4 cup green onions, chopped
1/2 tsp salt
1/2 tsp grated ginger
2 eggs, beaten
oil for frying

Combine all ingredients except chicken and oil. Add chicken and marinate overnight or for at least 5 hours. Fry in oil until golden brown.

This tastes decent, but I wouldn’t know just how good it is because I made the mistake of frying this while working on the Allakhazam website last night. As a result I have a whole lot of “overly golden brown” mochiko chicken, hahaha!


I ate this already and despite my hopes, it still tastes charred. I put in a bit of rice, some carrot and celery sticks, and in the bottom layer I put cheese, grapes, and banana flowers. That’s all I have time for today! Bento orders were mailed out yesterday!

Fruity Bento

Nothing much to offer today because we’re having a luncheon at work. I still had to pack snacks though, so I’ve taken a picture of my fruit bento. In it there are slices of some Jonagold apples, which I bought at Costco because they were the cheapest ones. They’re pretty good, interesting taste and a little tart. There are also peaches and banana flowers. I put the rest of the banana slices and flowers on the mini Eggo waffles for the kids this morning and they went bananas over it, haha!


I know, boring. But I figured it was better than nothing at all! ^_^
